Pasteurized Crab Meat
Pasteurized crab meat is caught and produced all over the world. The largest supply of BLUE SWIMMING CRAB MEAT (Portunus Pelagicus) comes from South East Asia. This species is almost identical in flavor, texture and size to the native Blue Crab (Callinectes Sapidus) found in the waters of the Mid-Atlantic and in parts of South America. Twin Tails Seafood Corporation's BOSS brand canned, pasteurized products come from the crystal blue waters of Indonesia, Thailand, Vietnam and the Philippines.
Another product that comes to us from South East Asia is the Red Swimming Crab Meat (Portunus Haanii). This product is typically caught and produced in Vietnam and China. It is an economical option with a slightly different taste/texture profile than the more familiar blue swimming crab products. Twin Tails Seafood Corporation's Supreme brand crab meat is produced in Vietnam and China under stringent HACCP guidelines. The products are handled and processed in manners similar to our BOSS brand to ensure you are receiving only the highest quality products every time.
Many companies choose to blend species in order to keep costs down. This also can lower quality and compromise consistency. Twin Tails is proud to provide single species products so that you will always know what you are getting in our cans!
Comparing Apples to Apples
Always check species and specification (grading, weight and/or piece count) There is no regulation in the crab industry for grading and naming. One company's Backfin might be another company's Special or their Jumbo might be equal to another company's Petite Jumbo. Also, all Chinese/Vietnamese Red Swimming Crab products are NOT created equal. Please refer to our product pages and point of sale sheets for descriptions of each grade of product Twin Tails has to offer.
The best way to ensure you are getting the best quality, consistency and buy for your money is to ask for the specification on each grade and the method of processing used in the production facility. And most of all, sample the products to ensure you are purchasing the best product for your application.

Shelf Life
BOSS Brand Crab Meat has a refrigerated shelf life of 18 months from the date of production. It is imperative that the product be kept refrigerated continuously at 38 degrees Fahrenheit or below. Once the product has been opened, it can be maintained in an airtight refrigerated container and should be consumed within 36 hours.
SAPP
Sodium Acid Pyrophosphate (SAPP) is an additive used to prevent the formation of crystals and discoloration of the crab meat. SAPP is not an allergen and is added in accordance with industry standards and expectations.
