Ingredients
6-8 medium to large tomatoes, halved, seeded, and sliced
2 large garlic clove, minced
2 large jalapenos, seeded and thinly sliced
1 cup fresh cilantro leaves
6 tablespoons fresh lemon or lime juice
Sea Salt and freshly ground black pepper
2 teaspoons olive oil
1 cup chopped onion
1 Lb BOSS or Supreme backfin or Super Lump crab meat
12 – 16 taco shells or soft tortillas
2 cups Iceberg lettuce, thinly sliced
2-3 cups shredded jack or cheddar cheese
1 avocado, thinly sliced
Directions
Preheat oven to 350. Hand dice or chop with a food processor: tomatoes, garlic, half of the jalapeno, 1/2 cup cilantro, and the lemon or lime juice. Salt and pepper fresh salsa to taste. In a large skillet, heat oil over medium heat. Saute onion and remaining jalapeno until soft, Add crab meat and cook just until crab is warm, about 2 Fill shells or tortillas with crab mixture and present fresh salsa, lettuce, cheese, avocado and remaining fresh cilantro for topping to suit.
